Cheese Crisps… The Snack of Awesomeness!!!

Ever since my body decided to stage its little coup against all things grain, I have had a Very difficult time finding any type of truly delish snack. 😦

Until now. 😉

I was perusing around Pinterest and stumbled upon a forgotten Pin I saved for my Randomkids…who also have multitudinous food allergies. :/

Anyhoo, found this awesome and Waaaay easy recipe for Cheese Crisps.

Here’s the simple version:

Preheat oven to 400 degrees…Not good with the whole elevation, moisture content, etc.. baking thing so  you’ll have to figure that out for yourself by trial and error.

Place parchment paper on a baking sheet.

Take your fav. cheese and cut into 1/4 inch squares…remember cheese spreads…I tried to tell my hubby this, but he Reeeeally wanted a big piece done…it melted and filled the   Entire baking sheet….yeah, not our best cheese crisp attempt. 😮

Bake for 5 minutes…more or less..just keep an eye on them and pull them out when desired numminess is achieved. 😀

My results:

Cheese Crisps of Awesomeness

Crispy Cheesey Awesomeness!!  😮 😮 and a Yummo for good measure. 😉

Remember Cheese Crisps are Awesomeness! ;D

Pumpkin disguised as a Watermelon?

Watermelon

Look what I found hiding amongst our local Farmer’s Market’s selection of watermelon.  It’s a pumpkin pretending to be a watermelon or maybe it’s a watermelon pretending to be a pumpkin?  Not sure, but it sat straight and pretty in my fridge.  It’s viney remnants made for a perfect handle to pop open the top and scoop out it’s juicy insides.  Yum!

We are eating as many as we can get our hands on cause they are absolutely tasty this year. 😀

My Randomkiddos put in a request for cantaloupe as well.  I’ll have to see if I can find one tomorrow.

I know that I owe ya’ll an update on my create space, but as of this morning it’s looking more like The Storage Space rather than anyplace to create anything.  I have been relegated back to the kitchen table, but I’m sure I’ll have an updated and finished Create Space soon. 😉

TTFN,

The Bluemoon Thinker 🙂

P.S.- Are you enjoying the fruits of summer while they are still around?  If so, what?  Or do you have your own Farmer’s Market growing in your backyard?  Spill the beans and let us know what ya got.  Leave a reply or two in the comments section below as per the usual.

Laters and Happy Summer Fruit Yumminess!! 😀

What’s on Your Plate??

It’s time for another installment of… What’s – On – Your – Plate???
Here’s this week’s selection…

Surprise in the Pan

We were low on food for me this week so I had one of my all time fave fall backs the Surprise in the Pan.

This time I cooked up some bacon and cut it into bite sized pieces then sautéed halved new red potatoes in olive oil until they were crispy and brown then I sprinkled the bacon all over and cracked 4 eggs into it cooking them till just soft baked so all the yummy egg goooooodness was still inside. I topped with thick slices of Monterey Jack cheese and drizzled ranch dressing and homemade honey mustard sauce over the top. Ohhhh my goodness! It was so delish!

This is by far my favorite type of dish now. It is so versatile and Always comes out absolutely fantastic!

So, there ya have it…That’s What’s on My Plate… Now, what’s on yours?

TTFN,

What’s on Your Plate? II

This is sort of a Revisit to last week’s What’s on Your Plate?

My hubby actually looked at my post from last week…well, at least the pic. 😮

And apparently he liked what he saw, cause he asked me to make it again for him for supper. Lols 😀

So, I made a Manly Version…which for my man basically just means 1 or more cheeses…usually more. 😉

So, without further ado…

Cheesy Bacon BarbQ Omelet.JPG

I call it Cheesy Bacon BarbQ Omelet…

I had leftovers so I added them all.

Bacon, Beef Barbeque, Pan Seared Potatoes, Garlic Green Beans, Sheep Parmesan, Eggs, Cooper Cheese, and Monterey Jack……Mmmmmm.

It was tasty to the Max!! 😀

Every single time I make these type of omelets they come out differently because I throw whatever  leftovers are in the fridge…they always come out waaaaaay awesome!

So, I will Definitely be making this again. 😀

Roasted Garlic Yum.JPG

Roasted Garlic……….. Oh-My-Gooodnessss!!!!

Can I just say that if I could, I would Eat THIS ALL of the TIME!!!!

I’d eat it plain, on meat, on veggies, with melted cheese, plain…did I say plain??

Ohhhh, I’ve NEVER had this before.  First of all, it filled my house with Awesomeness!  The smells in here are heavenly now.  😀

Secondly, I wasn’t sure what to expect, but the website I got the recipe from said to just sqeeze the bottoms and the garlic would pop right out….I did and it was just like butter!  Garlic butter..without the butter!

I only drizzled a little olive oil over these and sprinkled a little salt and pepper and baked….Oy Vey Everyone!

I will ONLY make my garlic like this from NOW on!

The best part?  I can store them for 2 weeks in the fridge or 3 months in the freezer!  Wowsers!!

Okay, so That’s What’s on My Plate.  What’s on Yours?

Further Adventures in Grain Avoidance…

Yes, I have been going on a lot of Adventures lately. Lols  😉

Everything in my life is an Adventure… 😀

Adventures in Homeschooling, Adventures in Foodie Fun, Adventures in Illustrating, Adventures in Writing, Adventures in Artying, Adventures in Photography, Adventures in Exercise…..Wow!  I should film a Docu-Adventure of my life and put it on Youtube!!!   😮

I’d be a Sensation!  😮  😮   Lols 😉

Okay, So back to reality and my Adventures in Grain Avoidance.

Currently our family is going thru a time of Extremely Low Fundage…as in no dough, zilch mula, nada cash, nope on the monies.  🙂

It is that lovely time of the year known as tax season… we are Very behind…again.  Maybe someday we will be ahead and I will be pleasantly surprised when our accountant emails us with our tax information. 😀

Until then, I will just dream. 🙂

Anyhoo, we are on an Extremely tight budget….not a problem if I could just get cheapo crapola food for everyone at our local cheapo stores and Not Have to buy stinking organic and non-GMO Everything!….but that is not the case…Sigh.

So, this week and the last couple weeks, I’ve been stressing out about how I will cut the food budget.  Sigh…again.

The Randomkids and I started writing a weekly menu and that has helped some, but this week we are getting down to the gritty of the nitty gritty and we are coasting on fumes coinage wise for food for the fam. :/

So, I’m breakin out All the stops and actually Baking again. :O

I used to bake ALL of the time…Homemade granola, cookies, bread, tortillas, I even tried homemade noodles.  You name it, I was pretty much up to try it out…probs fail, but I’d still give it a go. 😉

That All changed when I started having reactions to grains.  First it started with wheat, then rice, then pretty much everything…sometimes it’s so severe I can’t even touch the grains…I’m of course in that type of reaction mode currently….so baking is a painful and annoying process. 😦

So, back to the story.  I decided that in order to help curb our food budget I would bake cookies and make Granola again for brekkers and possibly even try my hand at bread again….maybe. 😉

Well, it has been a slow process. :/

Yesterday I made pancakes…made with rice flour, it wasn’t toooo terribly bad.  My wrists and hands only ached for a few hours and I had the Randomkids deal with the dishes so I had minimal time spent actually handling the grain itself. 🙂

But today we are making Oatmeal raisin and Oatmeal craisin cookies….I’m a bit nervous to tell ya the truth.  Oatmeal is way closer to wheat then rice is and two nights ago when I made pizza toast for my peeps, I had to ask my Randomkid oldest to come down and help me.   As soon as I picked up the bag of bread my wrists and hands hurt so bad I couldn’t bend my fingers.   Weird! 😮

So, today I am Extremely nervous.  The Randomkiddos already assured me that they will do Everything.  Love those guys. 😀

I’m gonna give it a go and see what happens. 🙂

Well, I’m off to see the wizard…no, just kidding…I’m off to get my day started.  Have an awesome sauce kinda day today fellow blog travelers. 😀 😀

TTFN,

The Bluemoon Thinker  🙂

P.S.- Any of you have any Adventures in _________  …..fill in the blank.  😉

Later Taters! 😀

What’s on Your Plate?

I decided to start a new segment…wait this isn’t a television show. Lol…well, sometimes it’s as badly written as television. Ha! 😉

I had previously called these posts Foodie Fun…but I decided that What’s on Your Plate? is a catchier name Aaaaaand, since I’m always looking for new recipes and foodies to make I would like to see Other people’s plates as well. 😀

So, on today’s lunch menu for me is Lettuce Wrapped Turkey Yums…

Lettuce Wrap Turkey Yums

For those of you who haven’t visited before…helloooo 🙂 …I am grain free and experiment with recipes to make for me and my family.

Each of us in the fam have a diff foodie ish….The Randomkids can’t have anything with corn…including eggs, chicken, and beef that wasn’t fed Non-GMO grains….also no peanut butter or too many nuts in general…limited amounts of wheat and no seafood…at least not ocean type seafood. The hubster has an intolerance for nightshade veggies…so I just have to make sure I don’t cook too much with tomatoes, potatoes, etc… 🙂

SO, needless to say, I’m Always huntin’ for new ways to look at a recipe. 😀

Back to my lunch…

I found a fairly healthy version of deli meat without any nitrates, weirdo preservatives, and the Randomkids can have it. Yay!

So, I made a nice summer feels turkey lettuce wrap with lovely heirloom tomatoes, carrot slivers, cooper cheese, a dab of mayo, and drizzle of dijon mustard.  Very light and it reminds me of summertime on my old deck overlooking my backyard garden on a warm evening. 😀

So, now that I shared my lunch with you….. What’s on Your Plate?

TTFN,

The Bluemoon Thinker 🙂

P.S.- Do you have a breakfast, lunch, dinner, or snack to share?  Please leave me a comment, pic, or a link to a post about….. What’s on Your Plate?

Happy Foodie Fun! 😀

Foodie Fabulous…

My Randomkid youngest got me hooked on all types of cooking shows.

I swear if he doesn’t grow up to build robots and diabolically take over the world, he’s gonna grow up and cook food and diabolically take over the world. Lols!! 😉😄

So, after binge watching worst cooks ever…or whatever it’s called.

Now I’m into I’ll have what Phils having.

I am loving this show.

Last year I was hooked on mind of a chef, now I’m sooo hooked on cooking shows its ridonkulous!

Maybe cause my diet is sooo restricted I’m looking for ideas to make food fun for myself again. Instead of just enduring my meals. Lol

This show is so great and I’m only on the first episode. He’s in Tokyo. I’ve Never Ever wanted to go to Japan before, but now after watching mind of a chef, jiro dreams of sushi and now this show. I want to go there. 😮 😎

Well, I’m off to see what other awesomeness Phil gets to try.

TTFN,

The Bluemoon Thinker 🙂

P. S.- Anyone in Blogolog land have another foodie show they highly recommend?

And yes I’ve seen chopped. In fact we had a Teen Chopped Competition. It was awesome sauce. Or maybe I should say it was awesomesaucepan. Lol. The kiddos still keep bugging me for a repeat.

Happy Foodie Funness!!  😀

Christmas Cookies in February…

My hubby was getting his tax stuff together and low and behold he found these…..

random christmas cookies

Don’t ask me where they were or how they got there, I just know I found them waiting for me on the kitchen counter…sorta like a long lost cousin that you haven’t seen for 15 years and quite honestly forgot that you had. Lol 🙂

Back at Christmas time our little Homeschool Group had a Christmas party and one of my friends made these little cookies. She said she made them from cornflakes, red hots, white chocolate, and food coloring…I’m pretty sure that was the recipe-ish…of course, this is sad…now that I’m typing this I’m not sure if these were from Homeschool Group or our Writers Up All Night Christmas Extravaganza….Hmmmm. 😀
Yup, the memory is the first to go people, the memory is the first to go. Lol 😉

Well anyhoo, boy was I surprised when these little guys popped up from 2 months ago and in pristine condition! 😮
I think they are just the cutest little things.  They look just like tiny little wreaths.

I tried to convince the hubby that they would make totes adorbs Christmas Ornaments….he said no.
I said that we could even spray them with clear coat if he wanted to…again with the no.

But I took a pic for posterity. 😀
Maybe I’ll just cut out the pics and hang them on the tree…That’s a joke, I wouldn’t Actually do that……….Well, maybe I would. Hmmmmm, again. Lol

I guess happiness can come wrapped in tiny sandwich bag packages. 😀
Yes…still easily amused over here. Lol 😉

TTFN,
The Bluemoon Thinker 🙂

P.S.- Any surprises pop up in your life this week? Random Christmas cookies, a great-great-great Uncle Ralph twice removed on your mother’s side, that receipt that you lost, but needed for the item you bought and absolutely hated and wanted to return to the store?
