What’s on Your Plate? II

This is sort of a Revisit to last week’s What’s on Your Plate?

My hubby actually looked at my post from last week…well, at least the pic. 😮

And apparently he liked what he saw, cause he asked me to make it again for him for supper. Lols 😀

So, I made a Manly Version…which for my man basically just means 1 or more cheeses…usually more. 😉

So, without further ado…

I call it Cheesy Bacon BarbQ Omelet…

I had leftovers so I added them all.

Bacon, Beef Barbeque, Pan Seared Potatoes, Garlic Green Beans, Sheep Parmesan, Eggs, Cooper Cheese, and Monterey Jack……Mmmmmm.

It was tasty to the Max!! 😀

Every single time I make these type of omelets they come out differently because I throw whatever  leftovers are in the fridge…they always come out waaaaaay awesome!

So, I will Definitely be making this again. 😀

What’s on Your Plate?

I decided to start a new segment…wait this isn’t a television show. Lol…well, sometimes it’s as badly written as television. Ha! 😉

I had previously called these posts Foodie Fun…but I decided that What’s on Your Plate? is a catchier name Aaaaaand, since I’m always looking for new recipes and foodies to make I would like to see Other people’s plates as well. 😀

So, on today’s lunch menu for me is Lettuce Wrapped Turkey Yums…

For those of you who haven’t visited before…helloooo 🙂 …I am grain free and experiment with recipes to make for me and my family.

Each of us in the fam have a diff foodie ish….The Randomkids can’t have anything with corn…including eggs, chicken, and beef that wasn’t fed Non-GMO grains….also no peanut butter or too many nuts in general…limited amounts of wheat and no seafood…at least not ocean type seafood. The hubster has an intolerance for nightshade veggies…so I just have to make sure I don’t cook too much with tomatoes, potatoes, etc… 🙂

SO, needless to say, I’m Always huntin’ for new ways to look at a recipe. 😀

Back to my lunch…

I found a fairly healthy version of deli meat without any nitrates, weirdo preservatives, and the Randomkids can have it. Yay!

So, I made a nice summer feels turkey lettuce wrap with lovely heirloom tomatoes, carrot slivers, cooper cheese, a dab of mayo, and drizzle of dijon mustard.  Very light and it reminds me of summertime on my old deck overlooking my backyard garden on a warm evening. 😀

So, now that I shared my lunch with you….. What’s on Your Plate?

Christmas Cookies in February…

My hubby was getting his tax stuff together and low and behold he found these…..

Don’t ask me where they were or how they got there, I just know I found them waiting for me on the kitchen counter…sorta like a long lost cousin that you haven’t seen for 15 years and quite honestly forgot that you had. Lol 🙂

Back at Christmas time our little Homeschool Group had a Christmas party and one of my friends made these little cookies. She said she made them from cornflakes, red hots, white chocolate, and food coloring…I’m pretty sure that was the recipe-ish…of course, this is sad…now that I’m typing this I’m not sure if these were from Homeschool Group or our Writers Up All Night Christmas Extravaganza….Hmmmm. 😀
Yup, the memory is the first to go people, the memory is the first to go. Lol 😉

Well anyhoo, boy was I surprised when these little guys popped up from 2 months ago and in pristine condition! 😮
I think they are just the cutest little things.  They look just like tiny little wreaths.

I tried to convince the hubby that they would make totes adorbs Christmas Ornaments….he said no.
I said that we could even spray them with clear coat if he wanted to…again with the no.

But I took a pic for posterity. 😀
Maybe I’ll just cut out the pics and hang them on the tree…That’s a joke, I wouldn’t Actually do that……….Well, maybe I would. Hmmmmm, again. Lol

I guess happiness can come wrapped in tiny sandwich bag packages. 😀
Yes…still easily amused over here. Lol 😉

Mystery Tools in the Kitchen

I am big into yard sales, thrift stores, auctions. Just Love me a good sale period. 😉 Lol

Anyhoo, whenever I’m out I Always seem to find a Mystery Tool.

This weeks mystery tool only took me a few days to find out what it was.
I bought a set of 4 of these edged spoons at our local re-uzit store. I wasn’t exactly sure what they did, but thought they were cool looking so I bought them. 😀

I actually figured out what they were by watching an episode of I Love Lucy… believe it or not.

On the episode they were eating breakfast and she was using one of these spoons to cut wedges out of her grapefruit! 😀

So I looked it up on the net and sure enough they are most definitely grapefruit spoons.
I didn’t even Know there was such a thing! 😮

I used one today to cut the tops off my breakfast strawberries…of course I’m not sure if that was one of its originally uses, but whatevs. 🙂

More Foodie…Fun?

Ok, here we go with another Food post….I know, but it is Seriously hard to find yummy stuff to eat that’s healthy. There is only so much salad and meat variations that I can come up with. Oy!  :/

So, here’s my salad combo for tonight’s supper. *Sigh*

Yes, it looks pretty yummy, but I had the same thing for lunch…only with deli meat. *Double Sigh*

My doctor said that I can start introducing grains into my diet, but I’m not convinced. Lol
Soooo, sticking with the veggies and meat…… Yuuuuuuum. 😉

Maybe I can come up with something yummilicious for tomorrow that is Not salad and meat.

Eggs and meat maybe??  Lol 😀

No More Grain…

Yes, you read that correctly.  I quit grain Cold Turkey! 😮

My family has a loooong list of allergies, food related and otherwise so I figured how hard could it be? 😀

Actually, I had no choice.  For some strange-oid reason I started reacting to grains.

At first it was a bit of tummy problems with wheat…well, let’s just say when we were out and about if I had to go I’d be like, “Drive husband, drive like the wind!  Quick it’s a McD’s!” …*grabs the wheel from the passenger side to help him turn faster*… Jumps out, pushing small children and old people out of the way….You get the idea.    #^^’#

So, I Obviously cut out the wheat.  I switched to rice and limited amounts of oatmeal.  That seemed to have worked wonderfully well until I started getting Ridiculous pain in my wrists and joints. It was horrible!  I couldn’t open anything, twisting open a container…forget it.  Popping open tupperware lids…I would just sit there and wonder how long it takes a person to starve to death…Upside-I’d lose weight. 😉

I went to my doc, talked to some friends, and decided to give up grain.  It worked!  No more pain!  Yay, me. 🙂

Of course all of this happened right before Thanksgiving.  Thankfully…Ooo, no pun intended, lol…I had already started experimenting with no grain recipes at the end of October, so it wasn’t too horrible having no grain during the holidays.

I did miss things like potatoe filling and gravy…I forgot I could have substituted white beans, xanthum gum, or potatoe starch in order to make the gravy.  :/

But I have had a ton of fun trying new recipes out.  I am allergic to nuts so it’s made the whole searching for grain free recipes a bit harder, but I Looooooove me some Pinterest.  So if I find a recipe that looks promising but calls for something I’m not cool with right now, I search for replacement ingredients. 😀

Here’s one I’ve never tried before.  I took all of our leftovers from the week.  We had beef barbeque, garlic green beans, baked potatoes, and I made turkey bacon.

I took all the leftover ingredients and mixed them in various ways, mixed up a few eggs, shredded some cheese, and cut up the bacon.

I placed the various mixes in different casserole dishes poured on the egg, cheese, and bacon pieces and sprinkled Parmesan over all.

They each came out different, tasted delish, and Most Importantly passed the Family Likee Test. 😀delish

By the way, I discussed Cloud Bread in a previous post, but haven’t had a chance to try it out yet.  Anyone out there in internet land tried their hand at this recipe?  Or do you have any other yummo grain free recipes to share?  Please drop me a line in the Comments below. 😀

The No Microwave Oven Challenge….

Well, as I’ve said in a previous post.  We rent.  I Looove our rental and I really like our landlords, they are very nice people and take really great care of their house.

That’s Extremely hard to find.  We should know, we’ve been renting for a looooooong time. 😀

Anyhoo, this AM when the husband went to make his morning tea, the microwave turned on as usual and did its little spinny thing, But after 3 whole minutes… No heat.  His glass was as cold as when he first put it in the microwave!   Never, to be deterred, my husband turned it on for 2 more minutes…a total of 5 minutes cooking time.  Nothing, Nada, Zilch.  So, I called the landlord and they will be out to replace it ASAP.

Now, in the meantime, I got to thinking.

A year or so ago, I had chatted with the husband about the idea of going without a microwave.  It’s not really that great for ya anyhoo.

Well, we kicked it around a bit and then proceeded to chuck it right out the door.  After all, with all the kiddos food allergies I already cook enough stuff from scratch.

The microwave is a time saver, energy saver, and on crazy days, helps me be less on the Cray-side of life.  So, I let the whole idea float into the oblivion of my mind.

BUT, Now, I have the chance to take the NO Microwave Oven Challenge.

Soooo, I’m gonna try it out….at least until the new microwave is installed. 😉

Hey a girl can’t quit cold turkey All the time, right?!! 😀

Allergies, Allergies, Everywhere…

Random Thought of the Day 2

Allergies are normal part of every day life, right?  Our household is full of random allergies.

Allergies to peanuts, wheat, corn, night shade veg, most storebought cleaners, and the list goes on.  My favorite allergy, and I’m being sarcastic here, is the hidden allergy.  You know the one that hides in plain site as you amble along in life until, whammo!  Surprise, you’re allergic Aaaand reacting!  Oh, joy.

Havin’ one of those surprise, you’re allergic times today.  I ate at a Restaurant that we always eat at, you know that place where you’ve Never had a problem before. 😉

Well, I guess they started using something different in their cooking…you know that old line too…anyhoo, of course we didn’t put two and two together until we’d been eating the leftovers for two evenings!  Of course, typical of the sneak attack allergy.

You go around enjoying what you eat and then bam, it doesn’t like you anymore and that’s fine, cause the feeling is mutual bucko!

So, here I am on a perfectly wonderful Monday morning, when I should be working on school or I don’t know at least get a day in.  But no, I’m laying in bed with a pounding headache…you remember the Bugs Bunny cartoon with the kid with the hammer…”I wanna Easter Egg, I wanna Easter Egg.”…that’s me getting pounded on.

My face is hurting, cause of course my sinuses are puffy and the back of my head aches like Krazy!

Well, no more awesome food from that place anymore, thank you random cook for changing the way that you always made your recipes before. 😦

Back to eating at home for me….sigh.
