Here’s this week’s selection…

Surprise in the Pan

We were low on food for me this week so I had one of my all time fave fall backs the Surprise in the Pan.

This time I cooked up some bacon and cut it into bite sized pieces then sautéed halved new red potatoes in olive oil until they were crispy and brown then I sprinkled the bacon all over and cracked 4 eggs into it cooking them till just soft baked so all the yummy egg goooooodness was still inside. I topped with thick slices of Monterey Jack cheese and drizzled ranch dressing and homemade honey mustard sauce over the top. Ohhhh my goodness! It was so delish!

This is by far my favorite type of dish now. It is so versatile and Always comes out absolutely fantastic!

What’s on Your Plate?

I decided to start a new segment…wait this isn’t a television show. Lol…well, sometimes it’s as badly written as television. Ha! 😉

I had previously called these posts Foodie Fun…but I decided that What’s on Your Plate? is a catchier name Aaaaaand, since I’m always looking for new recipes and foodies to make I would like to see Other people’s plates as well. 😀

So, on today’s lunch menu for me is Lettuce Wrapped Turkey Yums…

For those of you who haven’t visited before…helloooo 🙂 …I am grain free and experiment with recipes to make for me and my family.

Each of us in the fam have a diff foodie ish….The Randomkids can’t have anything with corn…including eggs, chicken, and beef that wasn’t fed Non-GMO grains….also no peanut butter or too many nuts in general…limited amounts of wheat and no seafood…at least not ocean type seafood. The hubster has an intolerance for nightshade veggies…so I just have to make sure I don’t cook too much with tomatoes, potatoes, etc… 🙂

SO, needless to say, I’m Always huntin’ for new ways to look at a recipe. 😀

Back to my lunch…

I found a fairly healthy version of deli meat without any nitrates, weirdo preservatives, and the Randomkids can have it. Yay!

So, I made a nice summer feels turkey lettuce wrap with lovely heirloom tomatoes, carrot slivers, cooper cheese, a dab of mayo, and drizzle of dijon mustard.  Very light and it reminds me of summertime on my old deck overlooking my backyard garden on a warm evening. 😀

So, now that I shared my lunch with you….. What’s on Your Plate?

Foodie… Fun ?

Time Comsuming Breakfast

Wow!  I know that breakfast is the most important meal of the day, but must it also be the longest to prepare??  😮

Because of the whole non-grain thing, I have to make more,”complicated,” breakfasts. Gone are the days of a quick bowl of oatmeal, cereal, toast and sun nut butter, etc. Now I actually have to take the time to make a meal.  Oy!  Time, you say?  What is this time you speak of??  😉

So on today’s menu.  An egg, burger, and cheese omelet, turkey bacon, and homefries.

Of course, the hubby wanted some too so I made double my normal amount….well, triple…the hubby is a big eater, not that he ever gains weight… That is def. fodder for another post! Lol

Anyhoo, so for those of you who read any of my Random drivel… in an earlier post, I hinted at my foodie freak tendencies…Is it done enough? let me get out my food thermometers… Oh my gosh someone left the fridge door cracked open for 15 minutes? Throw ALL the food AWAY!! 😮

Okay, so I admit it.  I am a Foodiefreako-germaphobe. That’s not a real word obviously, I just came up with it, in fact my spell check is going zonkers right now….take that spell check! Mwahahahaha!!

Where was I? Oh, yeah. Foodiefreakogermaphobe… I’m extra careful with my foodie prep, well as compared to other normal people that I see cook food. 🙂  But because of the Foodiefreako in me I tend to overthink everything when I cook.
Aaaaaand because I hate doing dishes and the Randomkids have a round about way of “getting” to them to actually oh I don’t know…. Clean the flippin dishes so we actually, have clean plates, cups, utensils, and pots to cook with!!…I tend to cook as much as I possibly can out of one pot or pan.

So this morning started with me cooking the bacon, for normal people they would cook it according to package directions…9 minutes…me, 20-25 minutes..what? I like to know it’s done, AKA browned or blackened a bit. Lol

Then I put in my omelet after floating my eggs, drying them off, then mixing all my premade and cooked goodies into it…those things took time to finish up too but I’m not including that in my Brekkers Tale…

So, there I was, patiently waiting for the omelet to finish, when I suddenly realized I had forgotten all about the potatoes waiting in the microwave to be turned into homefries.

My hubby was gonna be late for work, a watched omelet Never cooks, and I needed to make the difficult decision…do I use another pan or not…tick, tock, tick, tock… Cue zoom in to biting nails.

I mean heck it was Bad Enough that I was baking the hubby’s toast directly on the oven rack!!! 😮  Oh the humanity!!
I never do ANYTHING like that, that is the hubster’s M.O. ….I find it horrifying, I mean what has been on those racks? We’ve only lived here for a year! What did the previous tenants and owners Do in the oven? The food needs to be safely on something, a cookie sheet, parchment paper, aluminum foil, anything!!

But, soon I calmed myself and figured… Hey, I wasn’t going to eat the toast, and he would normally do it anyway if I wasn’t there, soooo just go with it.

Okay, back to my Breakfast Tale…

There I was looking at the omelet that just would NOT bake!! and the homefries staring at me, just waiting to be made.  So I did what any other self respecting foodie cook would do, I gave in and pulled out another pot! 😮   ~Duh, Duh, Duhhhhhhhhh!!   😉

But, it was all cool, I cooked up the homefries, the omelet Finally got done, and I plated it all up.
The hubsters plate was sooo full he had to doggie bag half of it to work. LOL   In yo face, Subway and McD’s lunch… you Won’t be visited today! Ha!

Aaaaaand as a bonus, I was able to reuse the homefries pot for hot dogs at lunch. 😀

No More Grain…

Yes, you read that correctly.  I quit grain Cold Turkey! 😮

My family has a loooong list of allergies, food related and otherwise so I figured how hard could it be? 😀

Actually, I had no choice.  For some strange-oid reason I started reacting to grains.

At first it was a bit of tummy problems with wheat…well, let’s just say when we were out and about if I had to go I’d be like, “Drive husband, drive like the wind!  Quick it’s a McD’s!” …*grabs the wheel from the passenger side to help him turn faster*… Jumps out, pushing small children and old people out of the way….You get the idea.    #^^’#

So, I Obviously cut out the wheat.  I switched to rice and limited amounts of oatmeal.  That seemed to have worked wonderfully well until I started getting Ridiculous pain in my wrists and joints. It was horrible!  I couldn’t open anything, twisting open a container…forget it.  Popping open tupperware lids…I would just sit there and wonder how long it takes a person to starve to death…Upside-I’d lose weight. 😉

I went to my doc, talked to some friends, and decided to give up grain.  It worked!  No more pain!  Yay, me. 🙂

Of course all of this happened right before Thanksgiving.  Thankfully…Ooo, no pun intended, lol…I had already started experimenting with no grain recipes at the end of October, so it wasn’t too horrible having no grain during the holidays.

I did miss things like potatoe filling and gravy…I forgot I could have substituted white beans, xanthum gum, or potatoe starch in order to make the gravy.  :/

But I have had a ton of fun trying new recipes out.  I am allergic to nuts so it’s made the whole searching for grain free recipes a bit harder, but I Looooooove me some Pinterest.  So if I find a recipe that looks promising but calls for something I’m not cool with right now, I search for replacement ingredients. 😀

Here’s one I’ve never tried before.  I took all of our leftovers from the week.  We had beef barbeque, garlic green beans, baked potatoes, and I made turkey bacon.

I took all the leftover ingredients and mixed them in various ways, mixed up a few eggs, shredded some cheese, and cut up the bacon.

I placed the various mixes in different casserole dishes poured on the egg, cheese, and bacon pieces and sprinkled Parmesan over all.

They each came out different, tasted delish, and Most Importantly passed the Family Likee Test. 😀delish

By the way, I discussed Cloud Bread in a previous post, but haven’t had a chance to try it out yet.  Anyone out there in internet land tried their hand at this recipe?  Or do you have any other yummo grain free recipes to share?  Please drop me a line in the Comments below. 😀
